Unniyappam is a Kerala traditional deep fried sweet/snack which contains mashed banana and jaggery with the main ingredient raw rice. It takes time to soak rice and grind it to make perfect unniyappams. Here I am sharing a super tasty instant unniyappam recipe which can be made in half an hour.

Ingredients
  

  • 1 cup rice flour
  • 1/2 cup atta or whole wheat flour
  • 1/2 cup maida
  • 1 and 1/2 teaspoon rava or semolina
  • 1/4 teaspoon salt
  • 1 and 1/4 cup jaggery crushed
  • 4 pods cardomom (crushed or powdered)
  • 2 nos small bananas (preferably palayankodan type)
  • 1/4 teaspoon baking soda
  • Oil (to deep fry)

Instructions
 

  • Mix rice flour, wheat flour, maida, semolina and salt
  • Boil jaggery in 1 and 1/2 cup of water
  • Strain and pour the hot jaggery syrup into the flour mix
  • Add another 1/4 cup of water to it and mix well
  • Into a mixie jar add the bananas and grind to pulp
  • Add the banana pulp and 1/4 teaspoon of baking soda into the batter and mix well
  • Heat oil in an appe pan (The oil should just cover the cavities in the appe pan)
  • Keep on medium flame and spoon in the batter (one tablespoon in each cavity) and fry till golden
  • Flip over with a fork and spoon and fry the other side also till golden brown
  • Allow to cool and store in airtight contatiner (it will be good for around 4 days)
